Today I decided to make Ratatouille. :) and it was really nummy,
Ingredients:
1 eggplant
1 zuchini
1 squash
1 onion
3 tomatoes
spices and herbs to taste
Preheat oven to 350
I blanched the tomatoes and then peeled them at the same time i sauteed the onions with 3 gloves of garlic then i threw it all in the food processor until it was liquidy. i added a cup of oil
this is my base i put it in a oven pan that has at least 1 inch up.
i sliced all the veggies and put them on the sauce in the pan
I then put it in the oven until veggies were tender.

squash
So i discovered this new odd lucking squash.. and it think its an acorn squash. anywho in the better homer and gardens cookbook from idk when was a recipe of it baked and fille with applesauce.
So I followed it and made some rice to go with it.
its really simple
just cut in half and bake for thirty minutes on 350 degress cut side down (make sure to take seeds out)
then turn over fill with apple sauce and brown sugar (2 teaspoons) and then bake another 25 minutes

Food
So lunch was salmon, and noodles with sauce :) nom nom it was yummy.

More Nom
No picture this time but I have successfully made my own hummus it looks kind of interesting but it tastes delicious. It is especially good with tomatoes and salt. (nom nom)
Yesterday was my first day of classes and it was interesting. We'll see what happens. She decided that we didn't actually need the book -- Phew-- and that we had fridays of in the sense that we can work on the stuff that is due and get it done so that we didn't have to work on it over the weekend. Now I do need to get some stuff together in general but otherwise I think that this will be an awesome class. =)
I started working out and already after two days I feel better.

Succesful lunch
All day I have been having this craving for tomato basil soup... After searching the internet for recipes I came up with well nothing. Everything required stock or cream or some other item that one doesn't just have on hand. So, I created my own recipe. Here it goes:
Tomato basil soup the simple way.
2 Tomatoes
1 can organic tomato sauce un flavored
minced garlic
salt
pepper
paprika
pepper
1 small red onion
throw the tomatoes in the food processor and chop them up then add all ingredients but the onion in the pot and heat on medium low. Season with spices to taste. Sautee the onions and once they are done add them in the soup. Simmer on low 'til it is hot enough. Taste and add spices as needed
Makes enough for two people to have one bowl each.

The only difference for me in the bread is:
I used duck eggs instead of chicken,
guar-gum instead of xantham gum
and i didn't let it rise and just put it in the oven at 425 degrees for 15 minutes.
The yellow color comes from the duck eggs.
